'I can't live without cheese!' is many people's first thought when they consider giving up dairy – it's that unique umami flavour. So we've dedicated part of this issue to going deliciously dairy-free – revealing how, with very little effort, you can make your own almond milk and nut-based cheeses, plus there's handy advice to help you choose the best milk alternatives.
Sticking with the dairy-free theme, we can't help noticing that when men go vegan they don't usually crave chia seeds and courgetti! They often want filling, hearty dishes that look and taste like familiar favourites, from Sunday lunch with all the trimmings to a Friday-night curry. Ian Theasby and Henry Firth of the BOSH! vegan food channel and David and Stephen Flynn of The Happy Pear Café are guys who like their grub, and they've shared some of their most delicious plant-based takes on classic recipes, from jackfruit tacos to 'chick'n' nuggets. It's fingerlicking good!
On the subject of jackfruit, this exciting and versatile ingredient makes another appearance in Rachel Demuth's beautiful salad. Brimming with zingy flavours and fresh herbs, she shows that aromatic Vietnamese cuisine is a wonderful way to celebrate the best of summer produce (page 38); while if you're looking for quick postwork dinners you can't beat a noodle dish – try some tasty options with a healthy twist.
And if you like recipes that are fast and fabulous, you must try Sarah Rainey's brilliantly pared-back bakes – ingenious sweet treats made with just three ingredients.
