Banana and tofu fritters in sweet chilli sauce

Fried bananas are really popular, as well as very tasty. In this dish, they balance out the tofu with the sweet chilli sauce, which is coated over them. The result is a sweetish dish with a meaty texture.


  • 250g (9 oz) firm tofu drained
  • Pinch of salt and pepper
  • Cooking sauce:2 tbsp sweet chili sauce or mango chutney
  • 1 tbsp sake or white cooking wine
  • For the batter:
  • 75g (3 oz) corn flour
  • ½ tsp bicarbonate of soda
  • 2 bananas peeled
  • Oil for frying
  • 2 tbsp fresh lime juice
  • 1 tbsp water
  • 75g (3 oz) self-rising flour
  • 120ml (4fl oz) sparkling water
  • 1tsp oil


Stage 1

Place a plate on top of the tofu then load with a heavy weight such filled kettle or heavy can of food. Try to get as much water out as you can. Once drained, cut the tofu into bite-sized squares about the size of a small matchbox. Season them with salt and pepper and rest for 30-50 minutes or longer; sprinkle 2-3 tsp corn flour and toss well before frying.

Stage 2

Mix the ingredients for the batter until smooth; set aside. Halve the bananas horizontally, and quarter lengthwise.

Stage 3

Heat 3-5 tablespoons oil in a small deep frying pan or wok to 160°C. (a simple test is to place a cube of bread in the oil and if it turns golden brown within 45 seconds, the oil is ready.) Dip the banana pieces in the batter and then gently lower into the oil. Fry in batches until all sides turn medium brown and take out and keep warm. Reheat the pan. Fry tofu until all the sides are golden and firm. Push aside. Add cooking sauce, cook and stir until it thickens up. Return the banana fritters; coat the tofu and banana fritters evenly with the sauce.

Stage 4

Serve with boiled rice.
