Baked cranberry pistachio donuts full of cranberries bursting with flavor and nutty pistachios. Topped with a cranberry lemon glaze!

Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1 dash of nutmeg
  • 1/4 cup pistachios
  • 1/2 cup cocount milk
  • 1/2 tsp. vanilla extract
  • ¼ cup vegan butter
  • 6 tbsp lemon juice
  • 1/4 cup dried cranberries
  • 1/2 cup sugar
  • 1/4 tsp. salt
  • 1 dash cinnamon
  • 1/4 cup dried cranberries
  • 1/2 tsp. lemon juice
  • 1 flax egg
  • 1/4 cup coconut milk
  • 2 cups powdered sugar

Method

Stage 1

Preheat the oven to 350ºF.

Stage 2

In a large bowl, combine the dry ingredients and mix thoroughly. Combine the wet ingredients and cranberries in a small sauce pan over medium heat and mix until the margarine is just melted and the cranberries start to plump.

Stage 3

Add the wet mixture to the dry and mix until just combined. It should form a very soft dough.

Stage 4

Scoop dough into an ungreased nonstick doughnut pan.

Stage 5

Bake for 12 minutes. They won't brown, but a toothpick or knife should come out clean. While baking, add the 1/4 cup coconut milk, 6 tbsp lemon juice, 2 cups powdered sugar, and 1/4 cup cranberries to food processor or blender to make the icing.

Stage 6

Let them cool before you ice them. Additionally, top them with more pistachios and/or cranberries.
