Fried Artichoke with potatoes and pennyroyal

Artichokes

12 artichokes

Procedure:

Clean the artichokes and cook them in salted water with vinegar, bay leaf and black pepper. Leave to cool and fry in oil before serving.

Potatoes

500gr of potatoes

1 pinch of Maldon Salt

1 pinch of black pepper

Oil, mint and lemon

Procedure:

Peel the potatoes, cook in slightly salted water. Process (blend) and garnish with the olive oil, mint and lemon.

250gr of oil

50gr of lemon juice (squeezed lemon)

100 small mint leaves

1 pinch of salt

Procedure:

Blend everything together.

Plating:

Place the potato puree in a bowl, add the artichoke and some of the fried artichoke leaves for decoration.
