Crema di ceci

  • 4 tbsp olive oil, plus extra to serve
  • about 2 tbsp fresh rosemary
  • 1 litre vegetable stock
  • a little chopped parsley
  • 4 cloves garlic, sliced
  • 800g cooked chickpeas (home-cooked or canned)
  • salt and pepper


Stage 1

Heat the oil and fry the garlic and rosemary until the garlic begins to brown, but don't let it burn. Add the chickpeas and cook, stirring, for 3 minutes.

Stage 2

Add the stock, season well, bring to the boil and simmer for 5 minutes. Whizz until smooth in a food processor or using a hand blender.

Stage 3

Serve with a swirl of oil and some good crusty bread.
