Avocado salad with sun-dried tomato dressing

Ingredients

  • Salad: 2 little gem lettuce
  • 4 small spring onions, chopped
  • Dressing: 4 sun-dried tomatoes
  • 2 Tbsp. white wine vinegar
  • 0.5 Tsp. agave nectar
  • 1 large avocado
  • 2 Tbsp. pine nuts, roasted
  • 5 Tbsp. extra virgin olive oil
  • 1 garlic clove, crushed
  • Himalayan pink salt and chilli flakes to taste

Method

Stage 1

Put all ingredients of the dressing in a food processor and blend to combine all together.

Stage 2

Slice the avocado.

Stage 3

Toss together little gem lettuce and spring onions and arrange on serving plates.

Stage 4

Add avocado slices.

Stage 5

Drizzle the dressing over each salad.

Stage 6

Sprinkle with pine nuts.
