Strawberry prosecco

  • 100g caster sugar
  • 250g strawberries
  • 200ml water
  • 1–2 bottles vegetarian prosecco, chilled


Stage 1

Place the sugar and water in a pan and bring slowly to the boil, stirring, until the sugar is dissolved. Boil rapidly for 5 minutes. Remove from the heat and allow to cool.

Stage 2

Hull the strawberries and blend with a hand blender or food processor until smooth. Stir the purée into the syrup and chill.

Stage 3

To serve, remove the purée from the fridge, stir and pour an inch of the strawberry mixture into the base of 6 glasses. Top up with chilled prosecco.
