Preserve the summer in a jar with French Guy Cooking and Le Parfait:


  • 1 kg aubergines
  • 1 kg tomatoes
  • 1 garlic clove
  • Salt & pepper
  • 1 kg courgettes
  • 1 large onion
  • 300 g bell peppers
  • Olive oil


Stage 1

Wash the aubergines (remove the seeds if they are particularly large). Cut the peppers in half and remove the seeds and pith.

Stage 2

Peel the courgettes, onions, garlic and tomatoes. Deseed the tomatoes.

Stage 3

Dice the vegetables into the size of your choice.

Stage 4

In a large saucepan, brown the onions in a little oil, then add the aubergines and cook 10 minutes.

Stage 5

Add the peppers, cook for 10 minutes, then finally add the garlic, courgettes and tomatoes.

Stage 6

Season with salt and pepper and gently simmer for 50 minutes without a lid.

Stage 7

Immediately fill the Terrines or Familia Wiss jars with the ratatouille up to 2 cm from the brim. The ratatouille must be as hot as possible.

Stage 8

Cover the vegetables with a drizzle of olive oil.

Stage 9

Seal tightly and proceed immediately to the heat treatment, 1 hour at 100°C.
