Red Lentils with Cabbage

  • 1 1/2 cup red lentils, rinsed
  • 2 tablespoons Olive oil
  • 1 piece celery stick, chopped
  • 1 tablespoon fresh ginger, finely grated
  • 1 1/2 teaspoon red chili flakes
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 tablespoon flat leaf parsley leaves, finely chopped
  • 6 cups water
  • 1 piece medium onion, chopped
  • 3 cloves garlic cloves, crushed
  • 1 small head Savoy cabbage, thinly sliced
  • 1 piece jalapeno pepper, thinly sliced
  • 1 teaspoon ground coriander
  • to taste - Sea salt and pepper


Stage 1

Add water to a large saucepan, add lentils and bring to a boil, reduce heat and simmer until cooked, but not mushy, about 15-20 minutes. Set aside.

Stage 2

Heat olive oil in a large skillet and sauté onion until soft. Add garlic, ginger, cabbage, chilli flakes, chopped jalapeno, turmeric and ground cumin.

Stage 3

Season to taste and cook for about 12 minutes, until cabbage is tender.

Stage 4

Combine cabbage and lentils and season to taste. Serve hot or cold, sprinkled with chopped parsley.
