It's a rare week in my house that we don't have a pasta-based meal at least once. Ready in minutes, it's one of the most versatile kitchen staples and tastes equally good served simply with a drizzle of olive oil and a grating of cheese as it does dressed up in a more sophisticated dish. It's World Pasta Day on 25 October, so it seems like a good time to devote 12 pages to celebrating Italian cuisine, with recipes from talented chefs such as Gennaro Contaldo and Gino D'Acampo.
