Red Dragon Pie

A very filling type of Vegetarian Shepherds Pie with aduki beans and potato.
- 4 oz aduki beans
- 2 pints water for soaking
- 1 tablespoon oil
- 8 oz carrots scrubbed and diced
- 2 tablespoons tomatoe puree
- half pint aduki bean stock
- salt, pepper and butter
- 2 oz wheatgrain or rice
- 2 pints water for boiling
- 1 onion peeled and finely chopped
- 1-2 tablespoon soy sauce
- 1 teaspoon mixed herbs
- 1lb peeled potatoes
Prehat oven to 180c (GAS). Wash aduki beans and rice and soak overnight or steep in boilingwater for one hour. Drain, rinse then bring to boil in fresh water and cook for 50 minutes or until fairly soft. Drain, reserving stock
Heat oil and fry onions for five minutes. Add carrots and cook for 2-3 minutes. Add cooked beans and grains. Mix soy sauce, tomatoe puree and herbs with stock.
Pour over bean and vege mixture. Bring t boil and simmer for 20-30 minutes, so that flavour are well blended. Season to taste. Add a little more liquid if necessary so that final mixturte is moist Transfer into greased casserole dish.
Boil potatos until soft and mash them with butter. Seaosn well, Spead over beans and vege. Bake for 30-40 minutes until potatoe is crisp and brown. I often also add parmesan cheese to my potato mixture for some extra taste. Very moreish.

I have been making this recipe for years....I am not wholly a vegetarian could easily be but this dish makes a wonderful nutritious change to mealtimes....just the name alone is reason to give it a try with your children....mine have always loved it and now make it for their children....try it and love it!
