We've mastered a really good veggie gravy to go with classic sausage-and-mash served with a tasty wedge of roasted cabbage – just add your favourite veggie or vegan bangers!

Ingredients

  • 2 tbsp rapeseed oil
  • 250ml red wine
  • 2 tsp ketjap manis (or use 1 tsp soy sauce and 1 tsp caster sugar)
  • 2 tsp cornflour mixed with 1 tbsp water
  • ½ large green cabbage, cut into 4 wedges
  • 1–2 tbsp horseradish sauce
  • 8 vegetarian or vegan sausages
  • 1 large onion, finely sliced
  • 300ml vegetable stock
  • 1 tsp cocoa powder
  • ¼ tsp pink peppercorns, lightly crushed a few sprigs of thyme
  • 900g floury potatoes, peeled and cut into cubes
  • 1–2 tbsp single cream or non-dairy cream
  • juice of ½ lemon

Method

Stage 1

Preheat the oven to 180C/fan 160C/gas 4. Heat half the oil in a saucepan over a medium heat, add the onion and cook for 8 minutes or until softened and browned.

Stage 2

Add the red wine, bubble down so it reduces by half, then add the stock, ketjap manis, cocoa powder, cornflour mixture, pink peppercorns and a sprig of thyme.
Turn the heat down to a low simmer, cover with a lid and cook for 10 minutes or until slightly thickened.

Stage 3

Meanwhile, set the cabbage wedges on a baking sheet, drizzle over the rest of the oil and sprinkle with a good pinch of thyme leaves. Season with salt and pepper and roast for 20 minutes, or until tender and golden at the edges.

Stage 4

Cook the sausages according to packet instructions.

Stage 5

Bring the potatoes to the boil in a pan of cold water. Simmer for 8–10 minutes or until tender, drain then mash with the horseradish sauce, cream and seasoning.

Stage 6

Squeeze the lemon juice over the cabbage wedges, and serve with the mash and sausages, with the gravy on the side.
