Vegetable pasties

Ingredients

  • 225g cooked boiled potatoes, diced into small cubes
  • 1 onion, finely chopped
  • 255g cooked mixed vegetables, finely chopped
  • 350g shortcrust pastry

Method

Stage 1

Mix the potatoes, mixed vegetables and onion together in a bowl and season to taste.

Stage 2

Divide the pastry into 4 and roll each piece out into a circle about 20cm across. Dampen the edges of the pastry and mound the vegetable mix into the centre. Fold the pastry over from each side, making the pasty. Crimp and seal the edges together to a fluted edge with your fingers.

Stage 3

Place on a baking tray and cook at the top of the oven for 15 minutes at 200C/fan 180C/gas 6, then reduce the heat to 180C/fan 160C/gas 4 and bake for a further 45 minutes.

Stage 4

Serve hot or cold – makes a great lunchbox meal.
