Plantain Curry Recipe

Ingredients:

2 finely chopped shallots
2 finely chopped cloves of garlic
1 sliced and deseeded red pepper
1 red chilli, preferably scotch bonnet
1 tsp cinnamon
2 tsp cumin powder
¼ tsp nutmeg
3 sliced plantains
200g tinned and strained black-eyed beans
200g tinned and strained chickpeas
200ml vegetable stock
6 large roughly chopped tomatoes
4 finely chopped sprigs fresh thyme
Juice of 1 lime
Coconut Oil, for frying

Methodology:

1. In a large pot on medium heat, add 1 tbsp of coconut oil.
2. Place shallots, garlic, salt, pepper, cumin, nutmeg and cinnamon into the pot and stir lightly. Simmer for 2 minutes.
3. Add the thyme, peppers, chopped onions and plantain to the pot and stir well with the other ingredients. Cook for a further five minutes.
4. Pour the stock, black eyed beans, sliced chilli and lime juice into the pot. Turn the heat to low and leave to simmer for 10 to 15 minutes.
5. Serve with basmati rice and enjoy.
