'We decided that rescuing fruit from food waste beat sitting behind a desk all day, so we quit our jobs and set off on our mission to create more taste less waste!' says Ilana Taub, one of the founders of Snact, a pioneering food brand. Together
with her lifelong friend Michael Minch-Dixon, the pair, who had both been employed in the environmental and sustainability sector working on renewable energy and finance, decided to take the plunge and set up a food business four years ago.
Ilana and Michael source ingredients for their snack products that would otherwise go to waste. 'We never call our ingredients "food waste" as they are not – we get them before that happens. Food waste is a huge issue: globally we waste about one-third of all the food we grow. When you waste food, you're not just wasting the food itself – you waste all the energy and resources that went into growing, picking, processing and transporting it, such as water, soil, energy, labour and money.'

However, Ilana is keen to point out that it's a common misconception that using food that would otherwise be wasted is cost-effective, and says while they do get produce at a lower price than market rates, processing in the UK is costly.
Snact now has two vegan-friendly product ranges – fruit jerky and their new banana bars, both sold in fully compostable packaging. 'For our fruit jerky, we source British apples from farmers directly; this is fruit that would be discarded for a variety of reasons, like random weather events that damage them a bit or gluts in production,' says Ilana. 'Next we decided to launch banana bars to tackle some of the 1.4 million bananas that go to waste in the UK every day. We realised that all health bars were made with dates whilst bananas are the UK's most popular fruit – so we put a problem and an opportunity together. Our bars are made with surplus from the supply chain of large retailers and food businesses. We rescue them, dry them and then mix them with wholesome ingredients like nuts, seeds, gluten-free oats and spices.'

With plans to launch another new product this year and to expand the current range too, Ilana and Michael are continually innovating to increase the amount of food they can rescue. 'I'm proud that we've saved more than 200 tonnes of food
so far, that we were the first in the UK to launch a compostable packaging film and that we're inspiring other businesses to switch over as well!'
