Chemical engineer Martin Murray always nurtured a dream to open his own distillery one day and in 2014, after years working in the oil and gas industry, Martin and his wife Claire set up the Dunnet Bay Distillery and launched Rock Rose Gin.
Scotland is world famous for its whisky, so why did the couple choose to produce
gin? 'We like gin!' says Martin. 'I felt it was the best spirit for us to make our mark with hand-foraged local botanicals. Our distillery is all about creating spirits that celebrate the heritage and provenance of Caithness.
We had many experiments to perfect the Rock Rose Gin flavour profile – in fact, we
trialled over 55 different recipes.'
At the heart of any gin recipe is juniper. 'We use a blend of Bulgarian and Italian
juniper,' explains Martin. 'We experimented with different ratios and found the perfect blend of the two, which is the base of our gin for the other botanicals to shine.' Rock Rose Gin produces different Th editions throughout the year to showcase seasonal botanicals and allow enthusiasts
